Baked Egg Florentine w/ Hollandaise Touch
Taking some liberties on the standard Florentine recipe, I combined the fresh eggs with a mixture of cottage, feta & paremesan cheeses along with a healthy sampling of vitamin-rich spinach. After it came out of the oven piping hot, I added just a spoonful of warm mustard hollaindaise to the top to spice up the taste buds!
